{Bake} Homemade Halloween Caramel Popcorn

With all the scary movies you’re watching this week, I’m sure you’ll need a sweet and salty snack to get your taste buds tingling as much as the hairs on the back of your neck!

Homemade Halloween Caramel Popcorn to the rescue!

Be warned: this snack is decadent and might kill your diet.

Ingredients

  • 12-16 cups popped popcorn (about 3-4 microwave popcorn bags)
  • 1 cup butter
  • 2 cups brown sugar
  • 1/2 cup light corn syrup
  • 1/2 teaspoon baking soda
  • optional: 1/2 teaspoon vanilla; cinnamon; nutmeg

Step 1

Pop your popcorn and set it aside in a large mixing bowl. Make sure you’ve taken out all the unpopped kernels.

I made half of my popcorn in a skillet and mixed it in with some microwaved popcorn. If you have an air popper, that would be the best.

Step 2

Preheat your oven to 250 degrees. In a large saucepan, bring butter, sugar and corn syrup to a boil over medium high heat.

Make sure to grab the butter before your toddler makes it disappear!

Step 3

Simmer for 5 minutes.

Step 4

Take the mixture off the heat and add the baking soda. It will fluff and foam.

Step 5

Pour the caramel over popcorn and toss to coat.

I preferred mine with a lighter coating.

The darker batch was too sugary for my taste.

Step 6

Bake up to one hour, stirring every 10-15 minutes, until popcorn is crunchier, lighter and drier than before. Cool on waxed paper before eating.
